Honey Lavender Cookies

This quintessential spring cookie was created by our very own Allspicery Team member, Erica! We love the chewy interior, slightly crunchy sugar coated exterior and the beautiful essence of lavender. They make a wonderful Mother's Day gift.

INGREDIENTS

  • ⅔ cup (150 g) melted butter, cooled slightly 
  • ¼ cup (75 g) honey 
  • 1 cup (200 g) granulated sugar 

For finishing the Cookies

 

DIRECTIONS

Beat the melted butter, honey, sugar and lavender until smooth. Beat in the egg and vanilla. Mix in the flour, baking soda, and salt until well incorporated.

Cover dough and refrigerate for at least thirty minutes and up to 2 hours.

Preheat the oven to 350°F. Line two sheet pans with parchment paper. Combine even portions of coarse-grained sugar and Lavender Vanilla Sugar in a shallow bowl. Scoop about two tablespoons of dough, roll into a ball and roll in sugar mixture to coat entirely. Place the cookies about 2” apart on prepared baking sheet and flatten slightly.

Bake one sheet at a time for 10 to 15 minutes or until the edges are crispy and light brown in color. Allow to cool on baking sheet for about 5 minutes. Transfer cookies to cooking rack to cook completely before enjoying.

Store in an air-tight container at room temperature for up to a week.
